Ramadan Kareem!

This Ramadan, I am travelling to different countries across the world in order to learn more about cultural dishes eaten at iftar, which is the meal at sunset where the fast is broken.

Today I landed in the first country on my list – Nigeria! I will be staying here for a week until I travel to the next country, and I’m so excited to share my travel journey with you!

When breaking the fast, it is recommended to start with three dates and a cup of water before delving into the meal. This is the Sunnah, which means it’s the way the Prophet Muhammad used to do. Dates provide instant energy and promote digestive health, as they contain protein, vitamins and minerals.

Now that I’m in Nigeria, I would like to share a wonderful vegetarian recipe with you that you can make at home! This dish is known as both Kosai and Akara and is made from black-eyed beans. 

 
To make this dish, you need the following ingredients:
 
• 450 g dried black-eyed peas
• 1 medium-large onion, peeled and quartered
• 1 red pepper, seeded and quartered
• 3 garlic cloves, peeled
• 5 g fresh ginger (about a 1 tsp chunk)
• 1 habanero pepper with seeds (remove seeds for less heat)
• 500 ml olive oil for deep frying (adjust based on your pan)
• 7.5 g salt (about 1.5 tsp)
 
 You should follow these steps:
 
1. Pulse the dried beans briefly in a food processor to loosen the skins. Be sure not to grind them. Soak in hot water while you prep the veggies.
2. Rub the beans between your hands to remove skins, draining and refilling the water until most of the black parts are gone.
3. Blend beans and veggies in batches, adding a tiny bit of water if needed. Whip on high to add air for fluffy fritters.
4. Heat oil in a heavy pan. Drop in spoonfuls of batter and fry until golden, flipping once. Drain on paper towels.
5. Serve hot with pepper soup or your favorite dip. Store batter for the next day, whipping in air before frying.
